Unfortunately, there is only normal difficulty and no easy. So i guess I will just have to tough it out.
Combat is pretty straightforward once you figure out that your skills are usually a waste of resources as anything other than a finishing move. In most fights, the only skills you should ever be using are Meditation and your spirits.
In chapter 1, all of your skills are an absolute waste of resources so just save your SP for Meditation and, once you get her, Sylph in case the enemy has any special attacks she can block.
In chapter 2 and onward, you'll usually have to decide between using Sylph and Gnome but the overall strategy is the same. Sylph counters some attacks while Gnome allows you to break out of some unavoidable grabs.
Once you unlock Serene Demon Sword, you can even cheese non-boss fights in chapter 2 by spamming Serene Mind and Serene Demon Sword until you run out of SP. You're completely immune to everything as long as you use them back to back. Later normal enemies are tanky enough that you'll have to get lucky and not get grabbed for a few turns while you finish them off though. Keep in mind that I've only gone through the game on normal, I doubt this strategy works very well on higher difficulties.
Serene Demon Sword is also the most efficient skill in terms of damage per SP too iirc, although I don't think that comes up much.
P.S. Pay attention to the text during fights, it tells you when the enemy is charging up a big attack or grab and the game often tells you about unique gimmicks during the fight.
'aight, then if you're having issues on Normal difficulty, you need to change up how you view fights in this game.
Fights aren't Grind-based like in most RPGs, they are more "Gimmick"-based or "Pattern"-based, as in, most fights have optimal moves to use. For example, plenty of fights will actually make you use "Guard" (some enemy attacks will have to be Guarded, or else it's an insta-loss) tactically, while in most RPGs you don't ever glance at that button. Other fights will require you to use specific Spirits to not be beaten (such as Sylph/Undine to avoid insta-loss status effects, or Gnome to be able to struggle out of strong enemy's Grabs), hell at least 1 fight has you use the "Flail Wildly" ability, which otherwise is just a meme skill.
If you can't figure out the current enemy's strategy, keep in mind that, upon death (after reading/skipping the Bad End after losing the fight), you're taken to the "Evaluation" section, in which Ilias tells you how to actually defeat the enemy, their strategy etc (while berating you). Listen to those advices to know what to do within the fight (such as know if they have Insta-loss skills, what to do to avoid them, their weaknesses etc.). You can then restart the fight from the Evaluation section, too.
Once you start doing that, even completing the game on Hard will become doable (although in 1-2 fights you'll need to get lucky, too, since it is possible the enemy could use a sequence of moves that's unbeatable). Completing the game on Normal using the intended strategies should be a cakewalk by comparison.
